Your dinner* for the evening includes the following:

  • Amuse: Tuna poke with ant salt on rice crisp.
  • Superworm sausage with arugula, cilantro almond pesto, mezcal pickled tomatillo and cotija chip.
  • Beef wellington — local beef tenderloin in cricket flour pastry dough with cricket-mushroom duxelles and prosciutto. Served with a fall vegetable mash and crispy celery root.
  • Cricket cannoli with whipped honey ricotta, grasshopper pistachios and chocolate.
